Tarragon (Artemisia dracunculus) is an aromatic herb widely used in cooking for its delicious and distinctive flavour. The leaves of tarragon have a bitter and slightly pungent flavour and add a distinctive aroma to dishes.
Often used to flavour meat dishes, fish, sauces, salads and sauces. Of the various branches of tarragon, the French tarragon is the best known and most appreciated in culinary use.
