The texture and content of our honey specialities:We use a high proportion of untreated raw honey in our products to ensure that the valuable bioactive ingredients and enzymes contained in them are preserved. This natural processing method allows our honeys to crystallise, a clear sign of their high quality and natural state. Our speciality honeys have a thicker, creamier consistency, often with a firmer, spoon-chiselled texture. This quality is appreciated by our experienced consumers, but may come as a surprise to first-time buyers. The natural consistency can be modified by gentle heating below 40°C, which softens the consistency. A major advantage of a firmer consistency is that honey can be sucked for longer, giving the valuable nutrients more time to be absorbed through the oral mucosa and thus more effectively exert their beneficial effects.
