Producer's forest honey.

Forest honey is mainly made from honeydew, which is derived from plant sap, so it typically contains little pollen and many more minerals. It is a very dark coloured, very fine, succulent honey.

It has beneficial effects on the respiratory tract, blood vessel clarity, has a calming effect and is excellent for anaemia due to its high mineral content, but should not be heat treated. It is recommended to be eaten by itself, as a sweet. A wonderful treat!

What is honeydew?
Some insect species, such as aphids and cicadas, suck the sap from plants (typically pines, oaks and other trees) and release the extra moisture as honeydew. This selected material is collected by bees, among others, and used to make forest honey.
